16This special issue explores the notion of terroir and its taste articulations within the context of accelerating climate change and its impacts on European agriculture. Moving beyond traditional geological understandings rooted in French history, the introduction and contributions critically analyze terroir as a complex, processual, and relational construct that intersects human and nonhuman agency. Focusing on three agricultural products – wine, specialty coffee, and extra-virgin olive oil – the issue highlights how terroir and its ambiguous, polysemic nature mediate the relationships between place and taste. The introduction traces the genealogy of terroir, from its French origins to its institutionalization through the "Appellation d’Origine Contrôlée" system and its subsequent global success beyond the wine field, highlighting its role in linking place, taste, quality, and power. By drawing on the existing anthropological and sociological literature, it offers critical insights into the ways the terroir logic has been mobilized by a range of different actors to assert authenticity, distinction, and economic value, while also reproducing hierarchies and exclusions within global food systems.
