132This article critically rethinks the concept of terroir in specialty coffee. While the term originates in viticulture, its application to coffee has grown significantly – yet it often remains vague or romanticized. Through a case study on Finca Balistrieri in Sicily, an emerging origin beyond the conventional coffee belt, the article explores how climate change, innovation, and shifting cultivation geographies challenge fixed notions of place and quality. Drawing on qualitative fieldwork, the study reconceptualizes "terroir" as a dynamic, provisional, and mobile construct. What emerges is a form of «disruptive terroir» that reveals an experimental and decentred approach to specialty coffee, grounded in adaptation rather than typicity and shaped by climatic realities and epistemic openness.
